So my 74 C10 has AC, but the pump isn't hooked up, the AC system probably isn't charged, and the AC blower doesn't even push air around. The truck isn't going to be used as a daily driver by any means, so the question is, do I just completely remove the AC? I mean, it'd free up A LOT of room in the engine bay and really clean things up, and I could always install it later if I want, but for now, it seems like a waste to have in. Thoughts?

Where are you located, does it regularly reach the 90s+? I removed my AC, it was broken. I got more power, a cleaner engine bay, and a more efficient heating system as a result.
Removing it is a bitch though, you may need to find an adapter plate that converts your firewall (not positive, but that's what I had to do with my TA).

Central Coast of California. So it rarely gets above the 90's. Hell, it's 84 today and everyone here is complaining about the heat except for me. This is great weather compared to where I grew up.
I'm thinkin it's coming out. It also doesn't get too cold here, so I won't be too upset without a heater in the winter. The truck has a bench seat, so everyone can just get cozy for warmth.

Where I live, working AC is a must. If you live in an area with temps that stay moderate, you could. Just keep all the parts.

It shouldn't be parasitic if it's turned off right? It's not really doing any damage being on the truck - unless you just really want the engine bay to look cleaner, I've never subscribed to that philosophy personally. I'd say its not worth bothering with unless you wanted to try to fix it and make it work.

does the 74 still have vent windows ? if so , probably wouldn't be too bad . I used to DD a 70 GMC without a/c in Texas , but I was young and stupid .

Yup, vent windows are still there. I'm honestly less concerned about the loss of AC as I am about the loss of blower and heater box. But I guess if the blower isn't working anyways, it might as well get taken off for now.

I live in California's Central Valley, and I decided to stop running the AC in my Dakota. All it needs is a recharge, but without it being there, I'm not tempted to use it, so I left it alone. The result? I'm getting 24 mpg right now on a 3.9 V6 and a 5-speed manual. It's not an essential component. If you can live without it, do. Your wallet WILL thank you. Plus, give it another 2 weeks, and the weather will be cooler around here in California.

Just for a balanced discussion...
I'm a big fan of keeping systems working in a car.. I rebuilt the AC in my Porsche 964, which wasn't a cheap thing to do.. but well worth it as I have a functioning defrost as well as heat.
Just my $.02, but will your vehicle be worth more with the gear left in and functioning?
